Wraps with pork fillet and mango

Ingredients for 4 servings:

  • 8 wraps
  • 500 g pork fillet(s), in one piece
  • 1 mango(s)
  • 1 head of iceberg lettuce
  • 500 g crème fraîche
  • 1 bunch of chives, freshly chopped
  • 1 lemon(s), organic
  • 80 ml soy sauce
  • e.g. chili flakes
  • e.g. salt and pepper
  • Sugar
  • n. B. Maggi
  • e.g. Worcestershire sauce

Working time approx. 30 minutes; Rest time approx. 15 minutes; Total time approx. 45 minutes

Marinate the pork fillet with the soy sauce and chili flakes for at least 15 minutes. Finely chop the chives and zest the lemons. Then squeeze the lemon. Wash the iceberg lettuce and tear it into bite-sized leaves. Peel the mango, remove the core, and cut into thin slices. Mix the crème fraîche with the chives, grated lemon zest, and lemon juice. Season with salt, pepper, and sugar, and garnish with Maggi and/or Worcestershire sauce, if desired. Remove the pork fillet from the marinade and sear on each side for 3-4 minutes (grill or pan). It’s best to check the cooking time with a meat thermometer and adjust it accordingly (alternatively, use a cut test). Then cut into thin slices and drizzle with a little marinade. Heat the wraps in the oven or microwave and spread with the crème fraîche. Top with lettuce, mango, and finally the pork fillet. Fold the bottom end over and roll it up to the side. Wrap it with a napkin to avoid dripping. This dish is perfect for a garden party, as all the ingredients can be served ready-made. It also offers a refreshing alternative for summer barbecues.
