Grilled mushroom skewers

Ingredients for 4 servings:

  • 500 g mushrooms, medium-sized
  • 1 zucchini
  • 1 bell pepper(s), red
  • 100 ml olive oil
  • 4 tbsp soy sauce, salty
  • 2 tbsp honey or agave syrup
  • 1 tsp oregano
  • 1 tsp thyme
  • 4 garlic cloves

Working time approx. 30 minutes; Rest period approx. 1 day; Cooking/baking time approx. 10 minutes; Total time approx. 1 day 40 minutes

vegetarian – if you replace the honey with agave syrup, the delicious skewers are vegan

The day before, peel and press the garlic, and mix it with the olive oil, soy sauce, honey or agave syrup, and spices. Clean the mushrooms. Slice the zucchini. Remove the seeds from the bell peppers and cut them into suitable pieces. Place everything in the marinade, either in a sealed container or a freezer bag. Let it marinate for several hours, turning occasionally to ensure everything is thoroughly marinated. Then thread the garlic onto skewers and grill for about ten minutes on each side.
