Ingredients for 2 servings:
- 1 zucchini (I used yellow ones)
- 300 g minced beef
- 150 g cheese
- 150g bacon
- 6 tsp herb butter or wild garlic butter
- 6 tbsp BBQ sauce of your choice
- salt and pepper
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes
Mix the minced meat with the cheese, salt, and pepper and let rest for a while. Now cut the zucchini into slices about 3 cm thick and remove the core. Fill each with the seasoned and prepared minced meat and add a small knob of butter to the top. Remove any gristle from the bacon, if there is any, and wrap it lengthwise and crosswise around the zucchini pieces. Now just put two zucchini pieces on each of 6 soaked wooden skewers and place them on the grill. Grill the skewers on both sides and then let them cook in the indirect heat with the butter side facing up. After about 15 minutes, brush them with the BBQ sauce, and after another 10-15 minutes the skewers are ready.
