Ground elder lasagna

Ingredients for 4 servings:

  • 500 g ground elder
  • 200 g cream
  • 50 ml milk
  • 200 g mozzarella, grated
  • 3 large onions
  • 50 g diced ham
  • 1 pinch of salt
  • 1 pinch of chili powder
  • 1 pinch(s) of pepper
  • 12 lasagna sheets

Working time approx. 1 hour; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 30 minutes

Wild herb lasagna

After years of being annoyed by the ground elder in my garden, I decided to eat it all. It’s delicious, healthy, and grows back quickly. Blanch the ground elder for 3 minutes and then puree it with a hand blender. I used a smoothie blender. Dice the onions and sauté them in a pan with the ham until translucent. Stir the onions and ham into the ground elder. Add the cream, milk, half of the mozzarella, and the seasonings and mix well. Layer with the lasagna sheets and top with the remaining cheese. Bake at 180°C for about 30 minutes.
