Gügü's pea and artichoke stew

Ingredients for 4 servings:

  • 750 g peas, frozen
  • 1 can/n artichoke bottoms
  • 1 medium-sized onion(s), finely diced
  • 2 m.-sized garlic cloves, pressed
  • 1 medium-sized lemon(s), juice
  • 1 bunch dill, coarsely chopped
  • 7 tbsp olive oil
  • Salt and pepper, black

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Super tasty and easy

Drain the artichoke bottoms and quarter them. Squeeze the lemon juice over the artichokes and let them stand until you’re finished chopping. Heat the oil in a pot over medium heat, add the onion and garlic, and fry for about 5 minutes. Then add the artichoke bottoms with the lemon juice and fry for another 5 minutes. Finally, add the frozen peas and dill and season with salt and pepper. Simmer until the peas are tender. If you like, add a good splash of oil and a tablespoon of water while it’s cooking. Serve with flatbread and salad.
