Ingredients
- 300 g Carrots
- 2 tbsp Oil
- 300 g Ground beef
- 100 g Lentils red
- 1 tsp Yellow curry powder
- 400 g Tomatoes (can)
- 1 pole Leeks
- 400 ml Vegetable broth
- Salt and pepper
Instructions
- Peel the carrots, cut in half lengthways and cut into thin oblique strips.
- 1El oil in a pan, crumble in the minced meat and fry until brown, season with salt and pepper. Heat the remaining oil (1 tablespoon) in a saucepan, add the carrots, lentils and 1tsp curry powder to the saucepan and sauté briefly.
- Add tomatoes, minced meat and 400 ml vegetable stock, bring to the boil and cover and simmer over medium heat for about 10 minutes.
- Clean the leek, wash thoroughly and cut into thin rings. After 10 minutes, add to the sauce and cook covered for another 5-10 minutes. Season with curry. Arrange on a plate and serve.
