Hack Lentil Curry

Ingredients
 

  • 300 g Carrots
  • 2 tbsp Oil
  • 300 g Ground beef
  • 100 g Lentils red
  • 1 tsp Yellow curry powder
  • 400 g Tomatoes (can)
  • 1 pole Leeks
  • 400 ml Vegetable broth
  • Salt and pepper

Instructions
 

  • Peel the carrots, cut in half lengthways and cut into thin oblique strips.
  • 1El oil in a pan, crumble in the minced meat and fry until brown, season with salt and pepper. Heat the remaining oil (1 tablespoon) in a saucepan, add the carrots, lentils and 1tsp curry powder to the saucepan and sauté briefly.
  • Add tomatoes, minced meat and 400 ml vegetable stock, bring to the boil and cover and simmer over medium heat for about 10 minutes.
  • Clean the leek, wash thoroughly and cut into thin rings. After 10 minutes, add to the sauce and cook covered for another 5-10 minutes. Season with curry. Arrange on a plate and serve.
