Ingredients for 3 servings:
- 250 g cheese (baked cheese), cut into 2 x 2 cm cubes
- 1 bell pepper(s), cut into 2 x 2 cm cubes
- 1 onion(s), halved and sliced into half rings
- 6 mushrooms, halved
- 1 clove(s) garlic
- 1 tsp thyme
- 1 tsp oregano
- 1 tsp rosemary
- lemon juice
- salt and pepper
- 3 tbsp olive oil
- ½ lemon(s), only the juice
- 1 bunch parsley, finely chopped

Back cheese from Cyprus
Combine the olive oil and lemon juice in a bowl and mix in all the herbs, garlic, and paprika. Let it all sit in the refrigerator for 24 hours. Briefly sauté the vegetable and herb mixture with the oil in a hot pan, then finish frying with the cheese. Serve with Speedy Gonzales quick white bread.
