Ingredients for 10 servings:
- 800 g minced meat, half and half or just minced beef
- 2 eggs, for the minced meat
- 2 onions
- Salt and pepper, marjoram and caraway for mince
- n. B. Oil
- 1 cup crème fraîche
- 1 cup of sweet cream
- 150 g cheese, grated
- n. B. Pizza seasoning
- 250 g spelt flour
- 20 g yeast, fresh
- 1 tsp, leveled salt
- 1 pinch(s) of sugar
- 200 ml buttermilk, room temperature
- 70 g butter, room temperature

Pumpkin and minced meat quiche
Put the flour in a bowl, make a well and add the chopped yeast that you have mixed with the buttermilk. Add the room temperature egg and the softened butter, salt and sugar and knead everything thoroughly for at least 5-10 minutes. The dough should no longer stick to your hands; if it does, add a little more flour and knead it in. If the dough becomes slightly warm, it is well kneaded. Or if you press in with your finger and the well rises again, then that is also OK. Now cover the dough and leave to rise in a warm place for half an hour. It should double in size. During this time you can turn your attention to the topping. Season the minced meat as above, mix in the egg and the finely diced onion. Now fry the whole thing in small clumps in oil in a pan, then let it cool. Then transfer to a bowl. Wash the Hokkaido squash, chop it into small pieces, and sauté it in a little salted water until soft. We accidentally mashed it, so we added it to the minced meat. Mix everything together and add the crème fraîche, eggs, and cream. Season with pizza seasoning and/or other spices to taste and spread it on the rolled-out dough, which has been placed on a baking sheet lined with baking paper and pricked several times with a fork. You can now sprinkle grated cheese on top, or, if you have enough dough left over, add a layer of pumpkin face or other motif. Bake in the oven at 180°-200°C for about 30 minutes until golden brown.
