Ingredients

Bread dough:

  • 3 Bay leaves
  • 1 Onion
  • 2 stems Marjoram fresh
  • 1 stems Sage fresh
  • 2 stems Fresh thyme
  • 1 tsp Pimento
  • 200 g Wheat flour type 405
  • 400 g Rye flour
  • 370 ml Water
  • 2,5 tsp Salt
  • 1,5 tsp Cumin
  • 2,5 tsp Dry yeast
  • 2 tbsp Oil

Instructions

  • The ham can be eaten warm with warm side dishes. Cold with various salads. Also known as Prague ham.
  • ham; Front or ham is a question of price but also a difference in quality. Cured with rind.

Preparation of the ham

  • On the ham, scratch the rind with a sharp knife. If you ask the butcher, he'll do it. Put the herbs and some water in a pan or casserole and let simmer for about 1 hour. Carefully with the salt, once the meat is cured and the bread dough is also salted.

Prepare the bread dough

  • Put all ingredients in a mixing bowl and knead well. When the dough comes off the edge of the bowl, it's done. Now cover and rest in a warm place until it has doubled. Then the meat should also be almost done, it still comes in the oven for 50 minutes or so. Grill.

Ham

  • When the ham has cooled slightly, roll out the dough so large that you can wrap the ham in it. Place on the dough with the rind side down. Because of this we have a nice smooth superficial on the ham. Fold the dough up over the ham and smooth it out with wet hands. Now turn it around carefully so that it does not enter and place on a baking stone or baking tray. Place in the grill preheated to 175 ° with a lid or oven. When the dough is lightly browned, it should be ready. You can test it with a thin meat fork. Cut open the baked dough (bread) at the bottom at a height of 2cm - 3cm all around. Carefully lift off the lid, take out the ham, cut it and put it back in place. This can be with hot or cold food. Cut or break the dough cover and add as a side dish.
  • It can be eaten warm with cabbage and dumplings. Cold with warm bacon salad, cabbage or potato salad. Good Appetite !!!!
