Ingredients for 4 servings:
- 40 g pistachios or/and pine nuts
- ½ lemon(s), juice
- 5 tbsp extra virgin olive oil
- 80 g arugula
- 50 g ham, preferably Serrano
- 30 g Parmesan, sliced
- 1 pinch of salt
- 1 pinch(s) of pepper, coarsely ground
Instructions
Working time approx. 10 minutes; Total time approx. 10 minutes
Roast the kernels in a pan without any fat, let them cool, and coarsely chop. Whisk together the lemon juice, salt, pepper, and olive oil. Top the ham slices with arugula and Parmesan cheese and sprinkle with half of the toasted kernels. Roll the slices tightly and arrange them on a plate. Drizzle with the vinaigrette and sprinkle with the remaining kernels and, if desired, some shaved Parmesan cheese.
