New York Style
Mix water (42°C), milk, dry yeast, and sugar in a bowl. Let rise for 5 minutes. Gently beat 1 egg with a whisk. Mix the wheat flour and salt in a separate bowl. Add the butter or margarine. Add the water-yeast mixture and the egg and knead into the dough. Sprinkle the work surface with a little flour and knead the dough vigorously for about 8-10 minutes until elastic. Cover and let rise for about 2 hours in a warm place (e.g., in a microwave without power – just close the door). After 2 hours, divide the dough into 4 portions and shape into rolls. Place on a baking sheet, cover, and let rise for another 2 hours. After about 1 hour, run hot water into a sink and place the baking sheet over the sink for the remaining hour. 4 hours is a very long rising time, but it’s worth the time. Gently brush the rolls with an egg and sprinkle with sesame seeds. Bake in a preheated oven (200°C, top/bottom heat) for 10 – 15 minutes until the rolls are golden brown.
