Handkäs – soup the way I like it

Ingredients for 12 servings:

  • 1 kg leek
  • 2 onions
  • 2 liters of broth
  • 3 tbsp flour
  • 1 cup crème fraîche
  • 400 g cheese (Handkäse), pre-ripened
  • White bread, a few slices
  • e.g. butter
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Clean the leek and cut into strips. Peel and dice the onions, and dice the hand cheese. Melt a little butter in a saucepan, sauté the cleaned leek and one onion in it. Add the broth and simmer for 10 minutes. Briefly fry the other onion in a saucepan and melt the diced hand cheese in it. Dust with flour, add the leek broth, and bring to a boil. Add the crème fraîche and thicken a little more if desired. Season with salt and pepper. Dice a few slices of white bread. Heat a little butter in a pan and fry the white bread cubes until crispy. Serve the soup with the croutons on top, garnished with a few leek rings if desired.
