Ingredients for 10 servings:
- Game, (head, legs, neck, breast, lungs, liver and the heart of 3 hares)
- 1 bunch of roots
- Salt
- pepper
- 2 tbsp flour
- 1 tbsp sugar
- 200 g sausage (black pudding)
- 50 g cranberries
- 3 tbsp sour cream
- 2 onions
- 1 liter of broth
Instructions
Working time approx. 1 hour 30 minutes; Rest time approx. 12 hours; Total time approx. 13 hours 30 minutes
Marinate all meat pieces for 12 hours in a marinade of onions, spices, root vegetables, and a little water. Cook the rabbit pieces in a pot with 1 liter of stock. Meanwhile, brown the flour and sugar in a pan with butter, then add the hare pepper. When the meat is cooked, add the black pudding, stir, and season to taste. Remove the giblets from the pot a little early to keep them moist. Dumplings or potato dumplings are recommended as a side dish. Garnish with 1 tablespoon of cranberries and a dollop of cream.
