Ingredients for 12 servings:
- 100 g cream cheese
- 135 ml strong coffee or mocha, cold
- 2 tbsp powdered sugar
- 70 g chocolate shavings
- 240 g flour
- 2 tbsp cocoa powder
- 2 tsp baking powder
- ½ tsp baking soda
- 1 egg(s)
- 100 g sugar
- 80 ml oil
- 100 ml buttermilk
- 30 ml cream
- 150 g white chocolate coating
- 12 pieces of confectionery (chocolate mocha beans)
Instructions
Working time approx. 40 minutes; Total time approx. 40 minutes
Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit). Grease the holes of a muffin tin or line them with paper baking cups. For the filling, mix the cream cheese with 2 teaspoons of coffee, the powdered sugar, and 1 tablespoon of grated chocolate until smooth. Thoroughly mix the flour with the cocoa, baking powder, baking soda, and the remaining grated chocolate. Lightly beat the egg. Add the sugar, vegetable oil, coffee, buttermilk, and cream and mix well. Stir in the flour mixture until the dry ingredients are moistened. Spoon half of the batter into the holes of the muffin tin. Spoon 1 teaspoon of the filling onto each hole and fill with the remaining batter. Bake in the hot oven for 20 to 25 minutes. Let the muffins rest in the baking tray for 5 minutes, then remove and cool on a wire rack. Melt the chocolate coating in a double boiler. Dip the muffins in the mixture and decorate each with 1 chocolate mocha bean.
