Harz cheese salad with crispy bacon

Ingredients for 4 servings:

  • 2 packs of cheese (Harzer Rollen) 125 g each
  • 2 small onions
  • 4 slices of breakfast bacon
  • 2 tbsp vinegar (white wine vinegar)
  • 1 tbsp oil
  • 1 tsp caraway seeds
  • some salt
  • some pepper
  • ½ bunch chives

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cut the Harzer cheese into thick slices. Peel the onions and slice or slice into thin rings. Cut the bacon into strips. Fry the bacon strips in a pan until crispy, then remove. Combine the white wine vinegar and oil and mix with the cheese, onions, caraway seeds, and bacon. Season with salt and pepper. Wash the chives, cut them into small rolls, and sprinkle them over the salad. Serve with farmhouse bread with cracklings and fried onions.
