Spicy chicken salad

Ingredients for 4 servings:

  • 200 g mayonnaise
  • 200 g natural yogurt, 1.5% fat
  • 4 tbsp Italian herbs, frozen
  • 1 garlic clove(s), pureed
  • salt and pepper
  • curry powder
  • 2 gherkins, finely diced
  • 2 tomatoes, diced
  • ½ cucumber(s), in 1/4 slices
  • 3 eggs, boiled, diced
  • 1 stalk leek (white part only), quartered, in fine strips
  • 300 g turkey or chicken, cut into strips, fried

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Total time approx. 50 minutes

For the salad dressing, combine the four ingredients above and season with salt, curry, and a little pepper. It’s okay to use a little too much, as the salad ingredients (except for the meat) are unseasoned and will therefore absorb the spices quite well. Add the remaining ingredients and stir in. Let it sit in the refrigerator, then season again. Serve on a bed of lettuce, if desired.
