Healthy apple waffles with spelt flour and coconut oil

Ingredients for 4 servings:

  • 4 m.-sized eggs
  • 250 g spelt flour
  • 1 tsp baking powder
  • ½ lemon(s), juice
  • 100 g coconut oil
  • 50 g nuts of your choice
  • 3 m.-sized apples
  • 100 ml water
  • 50 g raw cane sugar

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes

Grate apples or place in a blender (Thermomix speed 6, 5 seconds). Chop nuts or blend in a blender (Thermomix together with the apples). Beat eggs, butter, and sugar until fluffy (Thermomix speed 6, 10 seconds). Mix all ingredients with a hand mixer (I use my Thermomix speed 4, 10 seconds) until a thick batter forms. Bake waffles in a waffle iron until crispy brown on the outside. Depending on the size of the waffle iron, this will yield approximately 8 waffles. 450 kcal per serving.
