Healthy vegetable stew with beef

Ingredients for 5 servings:

  • 1 liter of water
  • 600 g beef for cooking
  • 4 m.-sized potatoes, waxy or mostly waxy
  • 250 g beans, green, washed, halved
  • 200 g peas
  • 1 stalk(s) leek
  • 5 m.-sized carrot(s)
  • 1 kohlrabi or 2 parsley roots
  • ½ celeriac
  • 1 m.-sized onion(s)
  • some butter for sautéing
  • 1 tbsp, leveled vegetable stock powder
  • ½ tbsp vinegar
  • 1 bunch of parsley
  • salt and pepper

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 1 hour 15 minutes; Total time approx. 1 hour 55 minutes

Boil the water and bring to a boil. Cut the beef and potatoes into 2 cm cubes, and chop the remaining vegetables. Finely dice the onion and sauté briefly in a little butter. Add the beef and sauté. When the water boils, add the stock powder and vinegar. Add the beef, potatoes, and onion and cook for about 30 minutes. After 30 minutes, add the remaining vegetables and cook for another 30 minutes. Add the chopped parsley for the last 5 minutes. Season with salt, pepper, and stock. A delicious stew that children will also love.
