Hearty Broccoli Omelette

Ingredients
 

  • 250 g Broccoli
  • 1 Onion approx. 100 g
  • 2 Garlic cloves
  • 1 piece Ginger the size of a walnut
  • 1 Red chilli pepper
  • 1 tbsp Sunflower oil
  • 200 ml Chicken broth (1 teaspoon instant broth)
  • 2 Eggs
  • 20 g Freshly grated mountain cheese
  • 0,5 tsp Turmeric
  • 0,5 tsp Mild curry powder
  • 2 big pinches Coarse sea salt from the mill
  • 2 big pinches Colorful pepper from the mill

Instructions
 

  • Clean / divide the broccoli into small florets. Peel the broccoli stalk generously, cut in half lengthways and slice diagonally. Peel and dice the onion. Peel and finely dice the ginger and garlic cloves. Clean / core the chilli pepper, wash and finely dice. Grate the mountain cheese (20 g) and add the beaten eggs (2 pieces), turmeric (½ teaspoon), mild curry powder (½ teaspoon), coarse sea salt from the mill (2 big pinches) and colored pepper from the mill (2 big pinches ) whisk. Heat the sunflower oil in a pan (28 cm) and add the onion cubes with the ginger cubes. Fry the garlic clove cubes and chilli pepper cubes vigorously / stir-fry. Add the prepared broccoli, fry briefly and deglaze / pour in the chicken stock (200 ml). With the lid closed, simmer / cook for approx. 7 - 8 minutes. Spread the egg mixture over it and let it set slowly. Divide the hearty broccoli omelette on 2 plates and serve.
