Omelette with Broccoli and Peppers

Ingredients
 

  • 2 Eggs
  • 2 tbsp Milk
  • 2 big pinches of salt
  • 2 big pinches of pepper
  • 0,5 Red bell pepper approx. 150 g
  • 150 g Broccoli
  • 1 Onion approx. 50 g
  • 1 Large clove of garlic
  • 0,5 Red chilli pepper
  • 1 tbsp Peanut oil
  • 0,5 tsp Chilli flakes
  • 1 big pinch of salt
  • 1 big pinch of pepper

Instructions
 

  • Whisk eggs with milk (2 tbsp), salt (2 big pinches) and pepper (2 big pinches). Peel and dice the onion. Clean the broccoli, cut into small florets, cook in boiling salted water (1 teaspoon) for about 2 minutes, drain through a kitchen sieve and rinse with cold water. Clean, wash and finely dice the peppers. Heat the oil (1 tbsp) in a medium-sized pan and fry the vegetables (diced onions, diced garlic cloves, diced chili peppers, diced paprika and broccoli florets) vigorously. Drizzle the beaten egg over it and let everything boil / set with the lid closed for about 12-14 minutes at a low temperature. Season with salt (1 big pinch), pepper (1 big pinch) and chilli flakes (½ teaspoon) and serve.
