Ingredients for 2 servings:

  • 4 sausages, raw
  • 8 slices of bacon
  • 8 mushrooms
  • 1 small onion(s)
  • 1 class can/n baked beans, approx. 200 g
  • 1 can tomatoes, chopped, approx. 400 g
  • 2 eggs, very fresh
  • e.g. parsley
  • salt and pepper
  • chili powder
  • some sugar
  • 2 tbsp oil for frying

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Peel the onion and finely dice. Wash the parsley, shake dry, and roughly chop. Pierce the sausages several times with the tip of a knife and fry in a pan with 1 tablespoon of oil until crispy. Just before the end of the cooking time, add the bacon. Trim the mushrooms and remove the stalks. Remove the sausages and bacon from the pan. Fry the mushrooms and onions in the frying fat and the remaining oil. Remove the mushrooms. Add the beans and tomatoes to the pan, season generously with parsley, sugar, salt, pepper, and chili powder, bring slowly to a boil, and then simmer for about 5 minutes. Add the mushrooms, bacon, and sausages to the beans. Carefully break the eggs into 2 small wells and let them set over moderate heat for about 10 minutes. The yolk should remain soft.
