Ingredients for 4 servings:
- 3 small onions
- 1 leek(s)
- 1 bunch of thyme
- ½ bunch rosemary
- 4 eggs, separated
- 200 ml milk
- 100 ml mineral water
- 150 g flour
- salt and pepper
- 3 tbsp oil
- 200 g ham (diced ham), lean or minced meat
- nutmeg

Kaiserschmarrn with a twist – hearty, rustic
Peel the onions and cut into wedges. Trim, wash, and slice the leeks. Finely chop the herbs. Mix the egg yolks, milk, mineral water, and flour into a smooth batter and season with salt, pepper, and nutmeg. Heat 1 tablespoon of oil in a pan, fry the onions, leeks, and ham (or minced meat). Add the herbs, fry briefly, and remove from the pan. Beat the egg whites until stiff, then fold into the prepared batter. Heat 1 tablespoon of oil in the pan, add 1/2 of the batter, and cover and fry over low heat for 5-6 minutes. Turn once. Tear the batter into pieces with two forks, remove, and process the remaining batter into Schmarren in the same way. Add the Kaiserschmarrn and the leek mixture to the pan and fry everything for 2-3 minutes, stirring occasionally. Season with pepper and garnish with herbs, if desired.
