Hearty lentil stew

Ingredients for 8 servings:

  • 500 g lentils
  • 800 g soup vegetables
  • 800 g potatoes
  • 600 g bacon, streaky
  • 6 sausages (smoking)
  • 4 bay leaves
  • 2 onions
  • some vinegar
  • 2 liters of vegetable broth
  • possibly salt and pepper
  • some clarified butter
  • some juniper berries

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes

Finely chop the onions and bacon and fry in a large pot until the onions are translucent and the bacon has taken on some color. Add the lentils and deglaze with vinegar. Allow the vinegar to evaporate. Add the vegetable stock with the bay leaves and juniper berries. Bring to a boil over medium heat, allowing the lentils to cook for the same amount of time. Then add the diced potatoes and the remaining chopped vegetables and continue cooking until tender. Add the smoked meats about 10 minutes before the end. Season to taste with salt and pepper and let it sit for a day. Finally, remove the bay leaves and juniper berries.
