Ingredients for 2 servings:
- 300 g cauliflower
- 250 g pizza cheese, light, grated
- 75 g diced ham, light
- 1 large egg(s)
- 2 garlic cloves
- 1 dash of olive oil
- 250 g tomatoes
- 125 g light mozzarella
- 70 g tomato paste
- 1 tbsp basil, chopped
- salt and pepper
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes
Cut the cauliflower into small florets, removing any stalks if possible. The resulting amount should be approximately 300g. Microwave the florets uncovered in a microwave-safe container for 8-10 minutes on high power and without adding any liquid. Then puree the cauliflower with a hand blender until it forms a puree similar to mashed potatoes. Preheat the oven to 180°C (convection oven). Mix the cauliflower puree with grated cheese, diced ham, egg, crushed garlic cloves, and a dash of olive oil, and season with salt and pepper to taste. Spread the batter evenly on a baking sheet lined with baking paper. Bake the base in the hot oven for 12-15 minutes until it is deliciously browned. Then spread the base with tomato paste. The topping can be varied according to taste. Tip: Since the dough already contains spicy ham cubes, I like to place tomato and mozzarella slices on the base and sprinkle with chopped herbs, such as basil. Return the finished pizza to the oven for another 4-5 minutes, until it reaches the desired degree of browning and the mozzarella has melted nicely.
