Hearty pumpkin and potato casserole with Gorgonzola and apples

Ingredients for 2 servings:

  • ½ Hokkaido pumpkin(s)
  • 3 m.-sized potatoes
  • 1 ½ apples
  • 100 g Gorgonzola, spicy
  • 2 tbsp herb cream cheese
  • 100 ml milk
  • 30 g walnuts
  • Broth, granulated
  • salt and pepper
  • nutmeg
  • Cinnamon powder
  • Parsley

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

Preheat the oven to 180°C (top/bottom heat). Peel the potatoes. Thinly slice the apples, pumpkin, and potatoes. Arrange the pumpkin slices in a large casserole dish and lightly salt them. Place a layer of potatoes on top, lightly salt and pepper them. Place the apple slices on top, then more potatoes, again lightly salt and pepper them. Scatter the coarsely chopped walnuts evenly over the top. Finish with a layer of pumpkin. Heat the milk with the Gorgonzola in a small saucepan. Melt the Gorgonzola while stirring, then add the herb cream cheese. Season the sauce with spices to taste and pour evenly over the contents of the dish. Bake the casserole for 45 minutes at 180°C (top/bottom heat).
