Ingredients for 4 servings:

  • 1 turnip(s) approx. 1 kg
  • 1 m.-sized onion(s)
  • 4 tbsp oil
  • 1 tbsp sugar
  • 1 tbsp vegetable stock powder
  • 100 ml apple juice
  • 1 tsp, leveled paprika powder, smoked
  • salt and pepper

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Peel the turnip, remove any woody parts, and dice the turnip. Peel and dice the onion. Caramelize the sugar in a pan over medium heat until light brown, then add the oil. Sauté the onion, then fry the diced turnip, taking care not to let it overcook. Sprinkle the stock powder over the onion and deglaze with the apple juice. Cover and simmer for about 20 minutes until soft, adding more water if necessary. Add the smoked paprika. Reduce slightly if necessary, then season with salt and pepper. Purée the mixture with a hand blender or, if you prefer a chunkier texture, mash it. Serve the turnip puree with oven-baked beetroot and beans, for example. It also tastes delicious cold as a spread on bread. One serving of 4 has 185 kcal.
