Hearty Vegetable Flans

The perfect hearty vegetable flans recipe with a picture and simple step-by-step instructions.

for the dough:

  • 250 g Flour
  • 1 packet Yeast 7g
  • 1 pinch Sugar
  • 20 g Clarified butter
  • 125 ml Milk, lukewarm

for covering:

  • 200 g Suckling pig fillet
  • 100 g Breakfast bacon
  • 5 Rods Spring onions
  • 1 Pc. Paprika, approx. 150 g.
  • 1 Pc. Carrot, about 150 g.
  • 3 Pc. Eggs
  • 75 g Creme fraiche Cheese
  • 50 ml Cream
  • 1 pinch Sea salt and pepper
  • 80 g Goat cheese, freshly grated
  1. Using flour, yeast, milk, sugar, lard and salt, knead a smooth dough. If the dough is too “crumbly”, stir in a dash of mineral water. Let the dough rise in a warm place for about 30 minutes.
  2. In the meantime, cut the breakfast bacon into fine strips and fry them in a large pan until crispy. Cut the suckling pig fillet into thin slices and fry with them. Possibly add a little clarified butter. Wash the spring onions, cut into fine rings and fry with them. Wash the peppers and carrots, cut into thin strips and sauté briefly. Then take the pan off the stove.
  3. Knead the dough vigorously and put it in a round baking tin coated with clarified butter. Pull up the edge, poke holes in it with a fork and let it rest for about 10 minutes. In the meantime, whisk the eggs, cream, creme fraiche, season with salt, pepper and fold in the goat cheese.
  4. Cover the dough with the contents of the pan, pour the egg mixture over it and bake at 180 – 200 degrees upper and lower heat for approx. 30 – 35 minutes.
