Ingredients for 2 servings:

  • 300 g apples
  • 2 tbsp lemon juice
  • 50 g sugar
  • 100 ml apple juice
  • 1 pinch of dried oregano
  • 500 g potatoes, floury
  • 50 g cornstarch
  • 1 egg yolk
  • 50 g butter
  • 2 tbsp breadcrumbs
  • 200 g black pudding
  • 2 tbsp flour
  • some oil
  • Salt
  • Pepper, from the mill
  • e.g. nutmeg, grated

Working time approx. 45 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 35 minutes

A surprising variation of heaven and earth

Quarter the apples, core them, and cut into small cubes. Leave the skin on. Caramelize the sugar in a saucepan until golden yellow, add the apples, stir, and deglaze with apple juice. Add the oregano and simmer for a few minutes, not too soft, then let cool. Boil the potatoes with their skins on until soft, peel, and press them through a potato ricer. Let cool slightly, then knead with egg yolk and starch. Season with salt, pepper, and a little grated nutmeg. Divide the dough into six portions and shape into dumplings. Place some of the apple compote in the center and seal tightly. This is heaven on earth. Let the dumplings simmer in gently boiling water for about 15 minutes. Brown the breadcrumbs in the butter and season with salt and pepper. Slice the black pudding, coat in flour, and fry in the oil until browned. Drain the dumplings and serve with the sausage and the remaining compote. Sprinkle the breadcrumbs over the dumplings and serve.
