Kale with sweet fried potatoes

Ingredients for 2 servings:

  • 1 kg kale or 1 jar
  • 400 g potato(s), waxy
  • 2 slices of smoked pork (neck)
  • 2 sausages, smoked (Mettenden)
  • 2 slice(s) bacon, streaky
  • 1 onion(s)
  • salt and pepper
  • margarine
  • Sugar

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash the kale and chop into large pieces. Bring to a boil with an onion and a little water. Add the smoked pork neck, Mettenden sausages, and the smoked bacon (in one piece) and let it cook. When the vegetables are tender, season with salt (if necessary; the smoked pork, sausage, and bacon already contain plenty of salt) and pepper. Don’t overcook the potatoes. Peel and quarter them (do not slice them!) and fry them in margarine. Season with salt. When they are slightly toasted, sprinkle them generously with sugar and let them brown. The sugar will caramelize. Don’t use too little sugar. It may sound strange, but it tastes excellent with the tangy kale. The potatoes will be crispy and taste less sugary.
