Heavenly cinnamon cream with blueberries

Ingredients for 4 servings:

  • 100 ml milk
  • 100 ml cream
  • 2 stalk(s) cinnamon
  • 3 egg yolks
  • 2 tsp cornstarch
  • 70 g cane sugar
  • 250 g blueberries
  • 4 tbsp cane sugar
  • 1 bunch of mint
  • Blueberries for garnishing

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Bring the milk, cream, and cinnamon to a boil, then set aside to allow the cinnamon aroma to develop. Remove the cinnamon sticks, add the egg yolks, cornstarch, and sugar, and mix well. Simmer while stirring until the cream thickens, then let it cool slightly. Place the berries in a sieve, rinse thoroughly, and then drain well. Divide the berries among glasses and add the cinnamon cream. Sprinkle the mixture with sugar and caramelize under the grill or over a blowtorch. Garnish with blueberries and mint and serve.
