Ingredients for 1 servings:

  • 260 g sourdough (rye sourdough) made from wholemeal flour, alternatively from another flour
  • 150 g flour (wholemeal rye flour)
  • 210 g flour (whole wheat flour)
  • 35 g flour (hemp wholemeal flour)
  • 55 g hemp seeds, peeled
  • 12 g sea salt
  • 290 g water, warm (approx.)
  • 10 g yeast, fresh
  • 2 tbsp hemp seeds, peeled, for sprinkling

Instructions

Working time approx. 20 minutes; Rest time approx. 3 hours; Cooking/baking time approx. 1 hour; Total time approx. 4 hours 20 minutes

Wholemeal bread with sourdough and edible hemp

Knead all ingredients into a smooth dough (food processor, approx. 7-10 minutes). Cover and let the dough rise in a warm place for half an hour. Turn the dough out onto a floured surface, shape it into an oblong loaf, and sprinkle with 2 tablespoons of hemp seeds. Then place the bread in a tin or proving basket. Let the bread rest in a warm place for 1.5-3 hours, depending on the strength of the sourdough and the amount of yeast added. Before baking, cut it three times crosswise and bake at 240°C (475°F) for about 50-60 minutes, decreasing to 190°C (375°F). This yields a loaf weighing approximately 1000g. Notes: I always bake the bread without adding yeast. This is possible with a strong sourdough starter. I also always bake my bread in a bread maker using the “Bake Only” program. To do this, I place the bread directly into the bread maker’s tin after the raising process and let it rest there. I then bake the bread for one hour using the “Bake Only” program. Therefore, the temperature and time specifications for baking in the oven are only guidelines. Information on edible hemp: Edible hemp is an ancient crop that originally comes from Central Asia. Until World War II, hemp was also widely cultivated and used in Germany. After the war, however, hemp was largely forgotten. Today, edible hemp has a relatively difficult time, as it is always immediately lumped together with THC-containing drugs (marijuana or hashish), which is incorrect. The edible hemp grown today is THC-free or very low in THC. Hemp contains many unsaturated fatty acids, vitamins (A, C, D, E, B1, B2, B3, B6, B12), minerals, and amino acids/proteins.
