Ingredients for 1 servings:

  • 400 g rye sourdough, made with whole grain
  • 200 g wholemeal spelt flour
  • 90 g wholemeal hemp flour
  • 200 g water, warm (approx.)
  • 30 g millet, whole
  • 30 g sesame seeds, whole
  • 30 g flaxseed, whole
  • 30 g sunflower seeds, whole
  • 90 g hemp seeds, peeled
  • 10 g beet syrup
  • 12 g sea salt
  • 2 tbsp hemp seeds, peeled (for sprinkling)
  • 10 g fresh yeast, optional

Instructions

Working time approx. 30 minutes; Rest time approx. 3 hours; Cooking/baking time approx. 1 hour; Total time approx. 4 hours 30 minutes

Wholemeal bread with sourdough and strong hemp flavor

Knead all ingredients into a smooth dough (food processor, 7-10 minutes). Cover and let the dough rest in a warm place for about 30 minutes. Sprinkle the bread pan or a loaf pan with 1 tablespoon of hemp seeds. Knead the dough briefly again and pour it into the prepared pan. Smooth the dough and sprinkle with the remaining hemp seeds. Cover and let it rest in a warm place for 1.5-3 hours. If baking in a bread pan, bake the bread for 1 hour using the “bake only” program. If baking in the oven, bake the bread at 200°C for about 50-60 minutes. Since I always bake the bread in a bread pan, the oven baking instructions are only guidelines. Since every oven bakes differently, it’s better to check the bread once more than once too few. After baking, turn the bread out of the pan and let it cool on a wire rack. It’s best to let the bread rest in the bread bin for a day before cutting it; it tastes better then. These quantities are enough for a loaf of about 1000g. * I always bake the bread without adding yeast, as I have a very strong rye sourdough starter. Here are a few more notes on edible hemp: Edible hemp is an ancient crop that originally comes from Central Asia. Up until World War II, hemp was also widely cultivated and used in Germany. After the war, hemp was somewhat forgotten. Today, edible hemp has a relatively difficult time, as it is always immediately lumped together with THC-containing drugs such as marijuana or hashish, which is incorrect. The edible hemp grown today is THC-free or very low in THC. Hemp is also extremely healthy. It contains many unsaturated fatty acids, vitamins (e.g., vitamins A, C, D, E, B1, B2, B3, B6, B12), minerals, and amino acids/proteins. Hemp can also be eaten raw.
