Ingredients for 4 servings:

  • 400 g flour
  • ½ cube of yeast
  • 125 ml milk, lukewarm
  • 1 tsp sugar
  • 1 onion(s)
  • 150 g butter
  • ½ tsp salt
  • 1 egg(s)
  • 1 egg yolk for brushing
  • Parsley, basil and oregano, 1 sprig each

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

American yeast dough pretzels

These ingredients are enough for 12 herb bagels. Put the flour in a bowl and make a well in the middle. Mix the yeast, sugar, and milk together and pour into the well. Let it rise for 15 minutes. Wash the herbs, pick the leaves, and finely chop them. Dice the shallot. Melt the butter and briefly sauté the herbs and shallot. Let it cool slightly. Add the herbs, shallots, salt, and egg to the flour and knead everything well. Let the dough rise for about 30 minutes. Shape the dough into 12 balls, place them on the baking sheet, and flatten them. Preheat the oven to 180 degrees Celsius. Cut out small holes (5 cm in diameter). Brush the bagels with egg yolk and bake for about 30 minutes.
