Ingredients for 4 servings:

  • 6 eggs
  • Mixed herbs (parsley, chives, thyme and mint)
  • 1 shot of milk
  • 3 tbsp cheese, grated (e.g. Parmesan)
  • Butter for frying

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

1. In a bowl, whisk the eggs with a little milk, grated Parmesan cheese, a pinch of salt, and the chopped herbs until creamy. 2. Melt a little butter in a pan, and once melted, add the egg mixture to the pan. 3. Reduce the heat slightly and let the eggs cook with the lid on the pan for about 15-20 minutes. Once the mixture has set, flip the frittata and cook for another 5 minutes on the other side. 4. Transfer the frittata to a large plate, garnish with some herbs, and serve.
