Herb oil "Gyros" with fresh herbs

Ingredients for 1 servings:

  • 750 ml extra virgin olive oil
  • 3 stalks of thyme
  • 1 stalk of basil
  • 1 sprig of marjoram
  • 1 sprig of oregano
  • 1 small piece(s) of chili pepper(s), depending on the desired spiciness
  • 5 black peppercorns
  • ½ tsp cumin
  • ½ tsp coriander seeds
  • 1 clove(s) garlic
  • 1 small piece(s) of cinnamon stick(s)

Instructions

Working time approx. 10 minutes; Rest period approx. 14 days; Total time approx. 14 days 10 minutes

Harvest the herbs dry, even with the flowers. Do not wash them, just shake off any dust if necessary. Place them in a bottle of olive oil and let them stand in a dark, warm place for 2-3 weeks. Then strain through a fine sieve. It’s best enjoyed simply with fresh white bread, or in small, beautifully decorated bottles, or poured over feta cheese, or drizzled over a tomato and mozzarella salad.
