  • 2 Pollack fillet approx. 150g each
  • 500 g Hokkaido pumpkin
  • 300 g Potatoes
  • 4 tbsp Italian herbs
  • White milled pepper
  • Salt
  • 20 g Herb butter
  • 1 Egg yolk
  • 4 tbsp Cream
  • 200 ml Fish stock
  • 100 ml White wine dry
  1. Put the sea salmon in salt water for a few minutes – this is supposed to kill the germs!?! Peel the potatoes and cut into cubes. Quarter the pumpkin, remove the core lining and also dice. You can eat the shell with Hokkaido, but I prefer to peel it.
  2. Remove the sea salmon from the salt water, rinse again and pat dry. Salt and pepper. Then distribute a tablespoon of the herbs on top of it, roll it up and secure it with a wooden skewer. Preheat the oven to 180 ° C fan oven.
  3. Mix the cream with the egg yolk and the remaining herbs. Melt the butter in a pan. Briefly sweat the potatoes and pumpkin. Then pour in the wine and stock and let everything simmer for 5 minutes.
  4. Put the vegetables with the stock in a baking dish. Place the pollack rolls on top and pour the ice cream over everything. Bake in the oven on the second rack from the bottom for about 20 minutes.
