Ingredients for 4 servings:

  • 200 ml sweet cream
  • 100 ml sour cream
  • some milk
  • 3 onions
  • 1 apple
  • 6 fish fillet(s) (matjes fillets) and matjes sauce
  • 3 gherkins
  • some cucumber juice
  • salt and pepper, pepper

Instructions

Working time approx. 20 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 20 minutes

Whip the cream slightly with a hand mixer. Stir in the milk and sour cream. Finely slice the onion, cut the apple, cucumber, and herring into small pieces. Mix everything with a little of the cucumber juice and the herring stock. Season gently. It’s best to let it sit overnight. Serve with boiled potatoes. Our children prefer to eat just the stipp, while the parents get the herring.
