Ingredients for 4 servings:

  • 8 fish fillets (fresh herring fillets)
  • 2 cups of natural yogurt
  • 1 cup sour cream
  • 2 tbsp cream
  • some pepper
  • 1 bay leaf
  • 1 onion(s)
  • 1 apple, sour

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

If the matjes is very salty, soak it in water for about an hour. Then pat it dry. Good, fresh matjes is usually not too salty and can be used immediately. Mix a sauce from yogurt, sour cream, and cream. Cut the onion into thin strips and the apple into pieces. Add them to the sauce along with the bay leaf and season with freshly ground pepper. Then place the matjes fillets whole in the sauce and let them simmer for at least an hour. Serve with boiled potatoes, pepper, and parsley.
