High Protein Hawaiian Pizza

Ingredients for 2 servings:

  • 80 g protein powder, neutral
  • 100 g spelt flour type 630 (plus a little more for rolling out)
  • 130 g low-fat curd cheese
  • 20 g fresh yeast
  • 2 tsp baking powder
  • 1 pinch of salt
  • some milk
  • 200 g tomato sauce with basil
  • some pizza seasoning
  • 100 g chicken breast
  • 100 g pineapple (can)
  • 150 g corn (can)
  • 100 g Harzer cheese
  • some basil, fresh

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 3 hours 25 minutes

1. Remove the low-fat quark from the refrigerator so that it reaches room temperature. 2. For the yeast dough, combine the spelt flour, neutral protein powder, baking powder, and salt in a bowl and mix. Make a well in the center, crumble the yeast into the well, and carefully mix the yeast with a little warm milk until it forms a paste. Cover the bowl with a cloth, place in a warm place, and let stand for 15 minutes. 3. Add the low-fat quark (room temperature) and knead everything into a smooth dough. Form the dough into a ball, sprinkle with a little flour, and cover again and let rise in a warm place for 2 hours. 4. In the meantime, prepare the topping: Brown the chicken and, once it has cooled slightly, cut it into small pieces. Remove the pineapple from the can, drain well, and then pat it dry again. Remove the corn from the can and drain well. Finely chop the Harzer cheese so that it is nice and crumbly. 5. Preheat the oven to 180°C (top/bottom heat). 6. Once the resting time is over, halve the dough, remove one half from the bowl and roll it out on a floured work surface. Place the dough on a baking sheet lined with baking paper. Do the same with the other half. 7. Then top the pizzas: Spread both pizzas with a little tomato sauce, sprinkle with pizza seasoning and top with the chicken, pineapple and corn (of course you can use other ingredients too). Finally, just distribute the Harzer cheese evenly on the pizzas. 8. Bake each pizza individually for approx. 18-23 minutes in the preheated oven at 180°C (top/bottom heat). 9. Add fresh basil to the pizzas if desired. Nutritional information (1 serving/pizza): 657 calories | 65 g carbohydrates | 80 g protein | 7 g fat
