Ingredients for 1 servings:

  • 350 g flour
  • 1 egg(s)
  • 200 g butter
  • 175 g sugar
  • 1 point lemon flavor
  • 200 g raspberry jam
  • Powdered sugar, for dusting

Instructions

Working time approx. 40 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 55 minutes

Sift the flour onto a work surface, make a well in the center, and add the egg. Place the butter in small pieces on top of the flour, sprinkle with the sugar and lemon zest, and quickly knead the ingredients with floured hands, working from the outside inwards, until you have a smooth, compact dough. Wrap the dough in cling film and let it rest in the refrigerator for at least an hour. Roll out the dough on a floured surface and cut out shapes. Cut a hole in the center of half of the cookies. Place the cookies on a baking sheet lined with baking paper and bake in an oven preheated to 180°C for 10-15 minutes. Once the baking time is up, remove the cookies from the oven and let them cool on a wire rack. Stir the raspberry jam until smooth, spread it all over the cookies, and cover with a cookie ring. Dust the Hilda rolls with powdered sugar and store in a cookie tin until ready to serve.
