Ingredients for 2 servings:

  • 1 large Hokkaido pumpkin(s)
  • 1 apple
  • 2 onions
  • 250 g bacon, streaky
  • 50 ml olive oil
  • 1 tsp honey
  • 1 roll(s) of goat cheese
  • possibly basil
  • possibly oregano
  • possibly salt

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Wash the pumpkin thoroughly, as the skin will be eaten, then cut it in half and remove the core with a spoon. Cut the pumpkin into bite-sized cubes and place them in a baking dish. Pour the olive oil over the pumpkin cubes and stir well to distribute the oil evenly. Place the baking dish in an unheated oven and cook at 150 to 200°C for 15 to 25 minutes, depending on the desired consistency of the pumpkin. In the meantime, dice the bacon and fry it over high heat. Then dice the onions, add them, and reduce the heat considerably. Core the apple, also dice it, and add it to the pan. Cook everything, turning frequently, until translucent. Then add the honey and seasonings to taste. When the pumpkin pieces are almost soft, spread the bacon, onion, and apple mixture evenly over the pumpkin and continue cooking. Slice the goat cheese and place it over the cooked pumpkin. Return to the oven until the cheese has melted. A dry red wine goes well with this.
