Homemade beef and garlic sausage

Ingredients for 1 servings:

  • 1.2 kg beef
  • 240 g fat (pork fat)
  • 16 g curing salt (nitrite curing salt)
  • 6 g garlic, fresh
  • 1.2 g coriander
  • 3 g black pepper
  • 1 g caraway
  • 200 g crushed ice or ice cubes
  • Intestine (artificial intestine)

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 10 minutes

Cut the beef and pork fat into strips and freeze. Meanwhile, mix the spices, then grind them. Run the beef through a meat grinder, using slices approximately 2-6 mm thick (depending on the size). Grind the meat with ice (you can also use a blender), mixing in the spices. Grind the fat with ice and then mix it into the meat. Fill the sausage into an artificial casing. Boil in hot water at 85°C for 10 minutes per cm of diameter. Rinse and chill in the refrigerator.
