Homemade croquettes

Ingredients for 4 servings:

  • 500 g potatoes
  • 2 eggs
  • 20 g potato starch
  • 20 g butter or margarine, liquid
  • salt and pepper
  • n. B. Nutmeg
  • breadcrumbs
  • oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Boil the potatoes, then peel and press them through a potato ricer. Let the potato mixture cool. Separate the eggs. Knead the egg yolks into the potato mixture with cornstarch, butter or margarine, salt, pepper, and nutmeg to taste. Form the dough into small croquettes. First, form a small dumpling, then roll it and gently press the ends together. Dip the dumplings into the egg whites and then into the breadcrumbs. Cook the breaded croquettes in hot oil or fry them in a deep fryer until they reach the desired color.
