Homemade ketchup

Ingredients for 1 servings:

  • 2 ½ kg tomatoes
  • 3 onions
  • 3 bay leaves
  • 1 piece(s) celeriac, small
  • 4 tbsp white wine vinegar
  • 1 tsp ginger powder
  • 1 tsp allspice, ground
  • ½ tsp white pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 5 minutes

Wash the tomatoes, remove the stems, and quarter them. Peel the onions, remove the stems, and cut into eighths. Place everything in a saucepan as deep as possible and bring to a boil. Add the remaining ingredients and simmer for about 40 minutes. Stir occasionally. Then remove the celery, bay leaves, and a few large pieces of onion with a slotted spoon. Purée all the remaining ingredients in the pan and bring back to a boil. This makes about 1 liter of ketchup. Store in a dark place.
