Ingredients for 2 servings:
- 500 g carrot(s), cleaned, peeled, sliced
- 1 tbsp vegetable broth, instant
- 1 tbsp honey
- 2 tbsp pine nuts
- salt and pepper
- 1 tbsp olive oil
- 1 tbsp parsley, chopped
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Combine the carrots with the instant vegetable stock and sauté in a non-stick pan with the olive oil for about 4 minutes. Add the honey and continue sautéing over low heat. Stir the pine nuts into the pan and roast with the carrots for about 2 more minutes. Season with salt and pepper, arrange on a platter, and sprinkle with parsley (or other herbs).
