Ingredients for 4 servings:
- 4 salmon fillets
- 2 tbsp honey, liquid
- 2 tbsp butter
- 1 onion(s), red
- 2 avocados, ripe
- 1 mango(s)
- 250 g cherry tomatoes
- 8 tbsp lime juice
- 250g mozzarella
- salt and pepper
- chili powder
Instructions

Dice the washed and peeled onion, avocados, and mango, along with the mozzarella. Mix everything together. Quarter the tomatoes and add them. Season to taste with 4 tablespoons of lime juice and salt and pepper. Season the honey with a little chili powder, salt, and pepper. Wash the salmon, pat dry, and brush one side with the honey mixture. Heat the butter in a pan and add the salmon, glazed side first. Now brush the other side with the honey glaze. Fry the salmon for about 2-3 minutes on each side and drizzle with the remaining lime juice. Pour the mango and avocado salsa over the cooked salmon and serve with rice or baguette.
