Fried salmon with pepper and mango vegetables

Ingredients for 2 servings:

  • 2 salmon fillets (200 g each)
  • some lemon juice
  • 2 bell peppers, red
  • ½ mango(s)
  • ½ onion(s)
  • 250 ml vegetable stock
  • 100 ml cream
  • some salt and pepper
  • some paprika powder
  • some butter
  • some clarified butter

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Halve the peppers, remove the insides, and cut into bite-sized pieces. Peel the mango and chop half of it into bite-sized pieces. Peel half the onion and finely dice. Heat a little butter in a high-sided pan and sauté the diced onion until translucent. Add the peppers and sauté for a while. Now add the vegetable stock, season with salt, pepper, and paprika, and season well. Continue sautéing until the peppers are soft but still firm to the bite. Now add the mango pieces, finish with the cream, and let them simmer for a short while. Drizzle the salmon fillets with a little lemon juice and fry them in a pan in hot clarified butter. Finally, season the finished fish with a little pepper and serve with the pepper and mango vegetables.
