Hot Tomato and Ginger Soup
The perfect hot tomato and ginger soup recipe with a picture and simple step-by-step instructions.
- 1 St. Ginger, about 3×3 cm in size
- 1 Carrot
- 1 Red pointed peppers
- 1 Shallot
- 1 tbsp Olive oil
- 250 ml Tomato juice
- 250 ml Vegetable broth
- 1 pinch Sugar brown
- Salt, pepper from the mill
- 150 g Natural yoghurt
- Mini mozzarella
- Paprika powder
- First off – I stole it! Yes, I admit that I looked at a tomato soup recipe from SoupGeniesser and made my own soup based on this recipe. 😉 ……. I hope you can forgive me, Peter !?
- Now to the soup: first cut the carrot, ginger, pointed pepper and shallot into small cubes and then sweat in olive oil. Always stir so that nothing burns. mmmmh …. smells very seductive. ,,,,
- Then add the tomato juice and vegetable stock, season with sugar, salt and pepper and simmer until the cubes are as soft as you like. I still like them with a bit of bite. Now off the stove and stir in the yogurt. Season again to taste.
- Serve the finished soup in soup bowls and add the mini mozzarella sprinkled with paprika powder. Good Appetite!!!
- Note 5: if you don’t like it that spicy, please use a smaller piece of ginger! ….. and one more thing – if you miss the spring onions that are on the picture with the ingredients on it in the recipe description – I didn’t use them after all. The soup was so delicious too!
