Hot Tomato and Ginger Soup

The perfect hot tomato and ginger soup recipe with a picture and simple step-by-step instructions.

  • 1 St. Ginger, about 3×3 cm in size
  • 1 Carrot
  • 1 Red pointed peppers
  • 1 Shallot
  • 1 tbsp Olive oil
  • 250 ml Tomato juice
  • 250 ml Vegetable broth
  • 1 pinch Sugar brown
  • Salt, pepper from the mill
  • 150 g Natural yoghurt
  • Mini mozzarella
  • Paprika powder
  1. First off – I stole it! Yes, I admit that I looked at a tomato soup recipe from SoupGeniesser and made my own soup based on this recipe. 😉 ……. I hope you can forgive me, Peter !?
  2. Now to the soup: first cut the carrot, ginger, pointed pepper and shallot into small cubes and then sweat in olive oil. Always stir so that nothing burns. mmmmh …. smells very seductive. ,,,,
  3. Then add the tomato juice and vegetable stock, season with sugar, salt and pepper and simmer until the cubes are as soft as you like. I still like them with a bit of bite. Now off the stove and stir in the yogurt. Season again to taste.
  4. Serve the finished soup in soup bowls and add the mini mozzarella sprinkled with paprika powder. Good Appetite!!!
  5. Note 5: if you don’t like it that spicy, please use a smaller piece of ginger! ….. and one more thing – if you miss the spring onions that are on the picture with the ingredients on it in the recipe description – I didn’t use them after all. The soup was so delicious too!
