How Long Do You Cook Green Beans Before They Are No Longer Poisonous?

Is it enough to boil green frozen beans for 30 minutes at 80°C so that the toxins are no longer toxic? Are green beans safe to eat if they haven’t been blanched before freezing?

Green beans should never be eaten raw. Raw green beans contain phasin, a toxic protein compound. In order to make this largely harmless, the beans should be properly boiled (100 °C) for at least 10 minutes, depending on their thickness.

The green beans can be frozen raw. However, we recommend blanching them beforehand. Blanching preserves the green color and crunchiness of the beans. Blanching also protects against unwanted germs. However, green beans can also be eaten if they have not been blanched before freezing. The prerequisite for this is that the beans are properly cooked (100 °C) for at least 10 minutes before consumption.

If you use frozen beans, please consider that they have already been blanched for a short time before being frozen. The cooking time is then reduced by a few minutes. Even beans that have been blanched before freezing must be cooked before consumption so that sufficient phasin is destroyed. The cooking water should also not be consumed.
