Oksana Skytalinska, a nutritionist, anti-aging medicine specialist, and founder of Dr. Skytalinska Academy, told us how to prepare a healthy Olivier salad.
First of all, the nutritionist advises replacing the sausage in Olivier with meat – boiled chicken breast, thigh, or turkey.
“If you really want Olivier with sausage, choose it carefully, read the ingredients carefully. Give preference to the sausage with the highest percentage of meat. After all, cheap sausages contain a very small percentage of meat, but a lot of salt, carbohydrates, and substances that provide the usual consistency of sausage,” the expert said.
“It also contains imitators and meat substitutes. It seems to us that we are eating sausage, but in fact, we are eating something completely different, as a result, the body undergoes processes that are definitely not healthy,” the expert said.
“So, if you want sausage in your salad, spend a little more money and buy a better quality sausage, let it be less,” she added. Skitalinska advised putting fewer potatoes in Olivier, but more eggs and meat.
“Because the protein in combination with fat gives you a very quick satiety, so you won’t eat much of this salad,” the nutritionist explained. You can also add fiber-rich foods to Olivier, such as boiled carrots and pickled cucumbers.
“It’s better to take fermented cucumbers, not pickled ones with a lot of vinegar. Although vinegar is not so terrible, fermented foods will improve Olivier’s absorption,” the expert summarized.
